Butter Chicken Noodle Soup Recipe

Ingredients

2 tablespoons butter

2 tablespoons butter

6 (12 ounce) cans diced fresh mushrooms, drained

1 cup water

1 tablespoon chopped fresh ginger

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon thyme

2 tablespoons beef bouillon granules

1 tablespoon dry bread crumbs

1 1/2 cups chicken broth

2 eggs, beaten

1 lot vegetable oil

3 cups chopped cooked chicken breast meat

Directions

In a large saucepan, combine the butter, butter, mushrooms, water, ginger, garlic powder, onion powder, thyme, bouillon, bread crumbs, chicken broth, eggs, oil, and chicken. Bring to a boil, stirring. Reduce heat to low, cook for about 5 minutes.

Stir chicken into soup. Return to a boil. Reduce heat to medium low, and cook for 10 minutes. Stir in the chicken and turn over once. Reduce heat to medium-low, and cook for 2 to 3 minutes. Stir in the broth, cook for 1 minute, covering.

Return chicken to soup, reduce heat to low, and cook for 4 to 5 minutes. Stir in the egg mixture, reduce heat to medium, and cook for 5 to 6 minutes, stirring occasionally, until chicken is tender. Return chicken to a stockpot and add green beans. Pour chicken mixture over chicken mixture.

Return chicken to stockpot and add green beans. Bring to a boil, reduce heat to medium, and simmer for 2 to 3 minutes, stirring constantly. Add rice vinegar, 2 to 3 tablespoons broth, and stir. Simmer for 30 minutes, stirring occasionally.

Add chicken mixture, green beans, and salt to any remaining stock or broth. Season with thyme and garlic powder, and simmer for 1 minute. Season with water and 1/4 cup broth and stir. Add the chicken and green beans. Bring to a low boil, reduce heat to low, and simmer for about 45 minutes, stirring occasionally.

Such a great basic recipe! I did tweek it by adding garlic powder, oregano, and basil. I've never made lasagne without cooking the noodles first. I was worried that the noodles might be tough but they were perfect.

Very tasty indeed, but my family thought it had too much spice for their taste. One member wouldn't eat that much alone. So we had to downgrade to normal.

Great, easy soup even for a winter cook. I made small amounts of the meat mixture and used a couple of eggs to heighten the flavor. I was concerned that the egg component would overwhelm the small amount of soup, but it was a perfect light soup. I made no changes to the recipe, merely added my own observations. My first attempt was credited to a different author(?), so I'm not sure what this recipe is. Thanks!
