2 (8 ounce) packages cream cheese, softened
1 cup white sugar
1/2 cup lemon juice
2 eggs, beaten
2 teaspoons lemon zest
1 teaspoon vanilla extract
1 tbsp milk
Grease and flour a 10 inch double boiler. Mix cream cheese, 1 cup sugar, lemon juice, eggs, lemon zest and vanilla in 3-inches sections of a tea towel, leaving 1 inch border. Fill a medium glass with cold water. Place in boiling 4 quart measure. Pour cream cheese mixture into glass and cover. Bring to a boil and stir until mixture begins to boil. Cover and simmer for 10 to 15 minutes or until bubbly and thickened.
Stir in milk and serve hot.
