2 sweet potatoes
2 teaspoons vegetable oil
2 carrots, chopped
1 medium onion, chopped
1/4 cup white sugar
1 pound turkey breast meat, sliced
1 pint heavy whipping cream
Heat oil in a Dutch oven or large pot over medium heat. Stir in potatoes, carrots and onion. Cook 15 minutes, stirring constantly. Mix in sugar, cover and simmer 15 minutes. Add chicken to potatoes. Pour the chicken mixture over the sweet potatoes and carrots in the pot. Bring to a boil, reduce heat, cover and simmer 15 minutes, stirring constantly. Reduce heat to low and simmer 15 minutes, stirring often.
Stir chicken into soup; cook 5 to 7 minutes. Reduce heat to medium and simmer for 5 minutes.
Stir in cream cheese, lemon juice and pudding mix. Bring to a low boil, stirring constantly. Serve hot.
