Jam-Jambalaya Recipe

Ingredients

1 (6 ounce) can sliced pineapple, drained

1 (4 ounce) can pineapple juice

2 scoops vanilla flavored Jell-O mix

1 teaspoon lemon zest

1 teaspoon lemon juice

1 cup boiling water

4 fluid ounces lemon-lime flavored carbonated beverage

Directions

In a large bowl, mix pineapple juice and pineapple jelly. Pour into quart jars with pinking tip. Cover, and shake to coat. Refrigerate 1 hour. Refrigerate 1 week. Refrigerate remaining jelly; refrigerate for 4 hours.

Stir pineapple jelly into pineapple gelatin and stir gently to dissolve. Adjust to your taste. Refrigerate 8 hours or overnight, or until jelly is thickened. Refrigerate leftovers.

While jelly is chilling, pour boiling water into a large saucepan and mix thoroughly. Stir in lemon-lime soda. Bring to a simmer, and bring to a boil. Cover, and partially cover jelly with plastic wrap. Remove from heat. Stir jelly slowly in 1 cup of pineapple juice to 1 cup of pineapple gelatin, stirring constantly. Pour into jars to 1/2 inch thick.
