2 tablespoons butter, softened
1 cup white sugar
1 egg, beaten
2 tablespoons fresh lemon juice
1 (6 ounce) can diced pineapple
1 (3 ounce) package lemon flavored Jell-O mix
3 1/4 cups sour cream
In a blender or food processor, press butter into bottom and 1/2 tablespoon sugar into top of glass container. Shake vigorously by hand or spoon. Pour in egg, lemon juice and pineapple. Shake vigorously.
Store sour cream in an airtight container in an airtight container in the refrigerator. Shake vigorously before serving.
Very refreshing. I added more ice cubes as suggested. People asked for a shake recipe. I made my own vanilla frosting. It didn't set up mine too hot though.
