1/4 cup butter, softened
1 small onion, finely chopped
4 tablespoons brandy
1 (10 ounce) can refrigerated biscuit dough
1/2 cup white sugar
1 teaspoon ground ginger
1 (3 ounce) package instant vanilla pudding mix
Preheat oven to 250 degrees F (125 degrees C). Lightly grease 9x13 inch baking pan.
To Make Pie: Melt butter in large skillet over medium-high heat. Stir in onion, then cook, stirring, until golden brown. Stir in brandy, sugar and ginger. Pour over pie in prepared pan. Sprinkle with pudding mix.
Bake in preheated oven for 45 minutes. Reduce temperature to 350 degrees F (175 degrees C), and bake an additional 30 minutes. Cool completely; frost. 3 to 4 hours or until toothpick inserted in center comes out clean. Meanwhile, remove from oven. Cool fully. Serve immediately.
