2 apples, zested and diced
3/4 cup corn syrup
1 cup water
1/2 cup vegetable oil
1 (.5 ounce) package active dry yeast
1/2 cup water
2 tablespoons white sugar
2 tablespoons lemon juice
Heat the syrup and water in a small saucepan-rate these marinates as needed to prevent clumping.
Place the apples in the marinade. Cover saucepan with foil, and heat the syrup and water over simmering water for 8 hours. (Note: You will want to let the apples sit for about 5 minutes).
When the syrup and water are cool enough, transfer apples to a small cup, and beat slightly with a wooden spoon. Add the sugar, lemon juice and yeast mixture, and cook over low heat for 4 to 4 1/2 minutes, stirring constantly. Turn a small spoon after 2 minutes, and proceed to cook 2 minutes more. When the warm syrup is firm, stir in the remaining 1/2 cup whipped cream, lemon juice and remaining 1/4 cup lemon juice. Beat well, and allow to sit 1 minute before serving.
