1 cup margarine
2 eggs
1 cup white sugar
1 1/2 teaspoons vanilla extract
1 teaspoon salt
3/4 cup fat free milk
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon ground cloves
1 cup flaked coconut
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch pans.
In a large bowl, cream together margarine, eggs and sugar until light and fluffy. Beat in the flour, baking powder, baking soda, cinnamon and nutmeg. Mix in the vanilla and coconut. Spoon batter into prepared pans.
Bake in preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
