Peanut Butter Pie IV Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

3/4 cup white sugar

1 teaspoon vanilla extract

1 (8 ounce) package (4 ounce) containers sour cream and peanut butter

1/2 cup butter, softened

1 egg yolk, beaten

1 teaspoon vanilla extract

2 cups milk

1/2 teaspoon salt

1 cup chopped pecans

2 tablespoons butter

1 tablespoon brown sugar

2 tablespoons chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, cream together cream cheese and sugar until light and fluffy. Mix in vanilla extracts. Stir in sour cream and peanut butter. Mix in butter, egg yolk, and vanilla extract. Fold in milk and salt. Mix until smooth. Mix in pecans. Spread mixture into a 9 inch pie pan.

Bake in preheated oven for 35 minutes, until bubbly. Cool completely before cutting into squares. Serve warm or cold.

This recipe is fab! So simple yet so tasty. I substituted plain old rice with this and it baked up beautifully. Could be better, but it was great way to use the leftover rice in a budget friendly meal.
