1 1/2 cups mayonnaise
1 cup red wine vinegar
1 cup golden raisins
1 cup sliced bananas
1 cup sliced pitted dates
4 red onions, diced
1/2 cup sliced almonds
2 cups chopped pimento peppers
1 1/2 cups chopped pecans
1 (12 ounce) can diced pineapple with juice
2 tablespoons lemon juice
2 tablespoons vinegar
1/2 teaspoon lemon zest
1 tablespoon honey
salt and pepper to taste
In a medium bowl, mix mayonnaise, vinegar, raisins and bananas. Press into the bottom of a 9x13-inch pan.
In a large bowl, whirl together sugar, lemon juice, vinegar, lemon zest, salt and pepper. Pour mixture into prepared pan. Refrigerate 2 hours to chill.
Heat oven to 350 degrees F (175 degrees C). Bake in preheated oven for 30 minutes, stirring, until fruit is tender. Remove pan from oven and cut into 1/4-inch slices. Serve hot.
