1 egg, beaten
1 cup plain yogurt
1 teaspoon salt
1 zucchini, peeled, seeded and cut into thin strips
3 bananas, peeled and sliced
1 (14 ounce) can diced tomatoes, undrained
3 cups raisins
3 egg whites
1/2 cup water
1/2 cup butter
1 (4.5 ounce) can asparagus, drained
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
In a medium-size bowl, beat egg, yogurt, and salt and pepper. Stir in zucchini, bananas, and tomato. Stir in raisins and egg whites until very stiff peaks formed. Stir in water, butter, and asparagus.
Bake in preheated oven 30 minutes, until lightly browned and set.
