4 eggs
1 cup chopped peaches - drained
1 cup milk
1/2 cup white sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon baking powder
1 teaspoon salt
2 cups quick-cooking oats
1 teaspoon vanilla extract

1 cup butter
3/4 cup milk
1 egg, beaten
1 cup chopped peaches
1 cup confectioners' sugar for decoration
Clean and scrub the bottom of a large double boiler pan.
Saute the peaches, milk and sugar until golden. Remove the peaches, stir in confectioners' sugar, and place the mixture in the greased two quart dish. Top with some oats and vanilla extract.
Press 1/2 cup of the green fruit filling into the top of pie shell. Spread about an inch thick, pressing gently into the baked crust.
Bake for about 35 to 45 minutes in the preheated oven, turn pie and cook for an additional 18 minutes.
Cool for 10 minutes, chilled and chilled pie. Serve immediately.
As I am trying to avoid processed sugar I used 2 tablespoons of raw sugar, beat it with 2 teaspoons of vanilla essence and dump the sugar into the cream when pouring over the top would make it thicker but oh so tasty.
Quick and easy preparation. A nice twist on plain old hamburgers. I did miss the Capsicum, which I plan on using in a sec. Thanks for the recipe.
