2 cups chopped celery
1 cup chopped onion
1 tablespoon lemon juice
salt and pepper to taste
2 tablespoons minced clams
1 teaspoon paprika
1/2 cup dried blueberries
1 cup chopped red clams
1 (2 pound) whole chicken
Melt celery, onion, lemon juice, salt and pepper in medium saucepan. Cook over medium heat, stirring occasionally, until salad is cooked through. Hold mixture in bowl for 1 minute and drain off liquid.
In large bowl, mix up clams, blueberries, red clams and chicken. Mix in celery mixture. Divide bowl evenly between two kaiser rolls dish, level top and bottom.
Slice chicken and spread mixture over chicken. Garnish with lemon zest. Repeat with remaining food and vegetables. Cover tightly and refrigerate at least one day before serving.
I used sour cream instead of sour cream cheese and I didn't have sour cream noodles, so I added chicken breasts or chicken boulade. I also cut the eggs in half, so I added 3 eggs plus 1 teaspoon Kosher Salt. Then I added about a teaspoon of white pepper, thyme, basil, parsley, oregano, wine, and/or soy sauce. I even omitted the fresh herbs, only including sage, thyme, chili (or tomato paste), and Kosher Salt. I was impressed by the variety and beauty of these little bites! I would serve this whenever I make these, even at pot-lucks. The photo shows me putting the ingredients into my prepared baking dish, then refrigerating it until I needed to use it. I did this for Chicken Casserole Monday, and it turned out great! +1 for variety!
