1 cup margarine
1 cup white sugar
1 1/2 teaspoons vanilla extract
1 egg
1 teaspoon apple pie spice
1 tablespoon light rum
1 teaspoon rum flavored extract
1/2 teaspoon bourbon, chilled
1 1/2 cups packed brown sugar
1/4 cup unsweetened cocoa powder
Preheat oven to 300 degrees F (150 degrees C).
In a large bowl, cream together the margarine and white sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla and egg. Combine the flour, baking powder, and cinnamon; stir into the creamed mixture alternately with the rum and bourbon. Mix in the brown sugar, and cocoa powder, gradually. Roll dough into 1 inch balls and place on ungreased cookie sheets.
Bake in preheated oven for 8 to 10 minutes, or until light tan. Allow cookies to cool on baking sheet for 5 minutes before removing to wire racks to cool completely.
