My Drums Recipe

Ingredients

1 (8 ounce) can sliced pineapple, drained

1 (3 ounce) can pineapple juice

1 quart orange juice

1 cup lemon juice

1 cup lime juice

Directions

Place pineapple in a double boiler over water and bring to a boil. Reduce heat to medium, and cook until tender and transparent, about 10 minutes.

Remove pineapple from heat, remove stems and cores, and set aside to cool slightly. Heat orange juice in a small saucepan or pitcher while stirring over medium heat. Pour lemon juice into pineapple, stirring or whisking constantly. Place again pineapple into skillet, adding lemon juice and orange juice to heat evenly.

I found this recipe one day while digging around and thought it sounded good. So I decided to make it and brought along a loaf of well grated English bread. I measured out 1/2 cup of butter with the added ingredients and mixed them all together. So good and so easy. When I think of a glaze I usually like a sticky, almost crispy coating, this didn't cook down and coat the roll, however. I also added a large pinch of salt. If you want a less sticky coating, then you'd probably want to increase the sugar. My family loved it- including the roll of origanilly fluffy white fibres. Not sure what the cook intended but it tasted good!
