1 pound peeled, seeded and chopped scallions
1 large onion, chopped
1 carrot, cut into 1/3 inch slices
2 cups water
4 cups peeled, cored and sliced celery
3 cloves garlic, minced
4 tablespoons white sugar
2 tablespoons vinegar
1 1/2 teaspoons dried oregano
1/2 teaspoon salt
1 1/2 teaspoons paprika
1/2 teaspoon dried sage
1/2 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon ground black pepper for garnish
Slice scallions into 1 inch pieces and set aside.
Stir celery and garlic into water in a large saucepan. Bring to a boil, stirring continuously, stirring until garlic is softened and vegetables are tender. Reduce heat and simmer for 5 minutes. Remove from heat and stir in sugar, vinegar, oregano, salt, paprika, sage and pepper. Mix thoroughly and serve.
