1/2 cup olive oil
8 slices bacon, cut into 1 inch strips
1 (16 ounce) can pepper jack cheese
2 (14 ounce) cans peeled and diced tomatoes with green chile peppers
1 (15 ounce) can whole peeled tomatoes with green chile peppers
2 (16 ounce) cans anchovies
1 (16 ounce) can black beans
1 (20 ounce) can sliced mushrooms, drained
1/2 red bell pepper, seeded
2 tomatoes, chopped
1/4 cup diced onion
1 tablespoon grated Parmesan cheese
Preheat oven to 400 degrees F (200 degrees C).
Heat olive oil in a large skillet over medium heat. Saute bacon until crisp; remove from skillet. Mix in pepper jack cheese, tomatoes, diced onion, peppers and anchovies. Pour over pepper jack cheese mixture. Spread over bottom of a 9x13 inch baking dish.
Bake in preheated oven for 50 minutes. Reduce heat to low. Cook 25 minutes, stirring occasionally, until cheese is bubbly. Pour over bottom of baking dish. Sprinkle with tomatoes, onion, peppers and anchovies. Cover and bake for another 25 minutes. Reduce heat to medium.
While baking, heat olive oil in a skillet over medium heat. Saute peppers and bell peppers over medium heat until tender. Remove peppers from oven, and stir in mushrooms, tomatoes and onion. Return peppers to oven.
Stir together the bacon cheese mixture and pepper jack cheese mixture. Place peppers and bell peppers on baking dish. Sprinkle with cheese mixture. Cover and bake for 30 minutes, or until peppers are tender. Serve hot.
