6 skinless, boneless chicken breast halves
1/2 cup sliced celery to serve
4 slices bacon, diced
6 cubed potatoes
1 cup chopped celery
1/2 tablespoon minced onion
1/2 cup shredded mozzarella cheese
1/2 teaspoon paprika
salt and pepper to taste
1 cup mayonnaise
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
Place chicken in pan, and spread with celery slices and bacon. Reduce oven temperature to 250 degrees F (120 degrees C) so that chicken's skin is very, very thin. Place potatoes in pan, and place on chicken, with bacon, celery, celery slices and potatoes.
Place chicken in pan, and sprinkle with mozzarella cheese, paprika, salt and pepper. Place on baking dish.
Bake chicken in preheated oven for 35 to 40 minutes, or until internal temperature of chicken reaches 145 degrees F (63 degrees C). Remove chicken from oven, and cool.
