2 1/2 cups baking oats
1 cup butter, softened
1/4 teaspoon almond extract
1 cup brown sugar
1 1/2 cups rolled oats
2 cups rolled brown sugar
1 1/3 cups golden raisins
1 cup chopped almonds
2 tablespoons butter, softened
1 cup vegetable oil
1 cup packed brown sugar
2 tablespoons butter, softened
1 teaspoon vanilla extract
Preheat oven to 400 degrees F (200 degrees C). Line cookie sheets with parchment paper.
To make the filling, mix the oats, brown sugar and raisins with the brown sugar mixture. Fold in the almonds and then stir all together.
Wrap the rolled oats with the brown sugar mixture. Cut into 3/4 inch slices and arrange on the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until light brown. Cool before cutting into 2 inch squares. Store them in an airtight container to keep them from breaking.
