2 tablespoons mayonnaise
2 tablespoons olive oil
1/4 teaspoon salt
3 pounds up to date spaghetti, sliced in half
1/2 cup chopped asparagus
1 large onion, thinly sliced
1 medium potato, diced
1 (8 ounce) package frozen mixed vegetables
Heat olive oil in a medium saucepan or skillet over medium heat. Saute mayonnaise (melted butter). Remove from heat, and allow to cool slightly.
Stir spaghetti slices into olive oil, and fry until lightly browned.
Add asparagus and onion, and heat for a few minutes. Remove from heat, and stir in the potato and vegetables. Pour over spaghetti, and toss to coat.
