3 eggs
1 cup white sugar
1/2 cup unsalted butter, melted
1 cup light corn syrup
1 cup graham cracker crumbs
1/2 cup white sugar
1 (8 ounce) can frozen raisins
1/2 teaspoon honey
Preheat oven to 400 degrees F (200 degrees C). Grease 6 muffin cups or line with paper liners.
In a large bowl beat eggs and 1 cup of sugar, then stir in the melted butter, corn syrup and graham cracker crumbs. Mix all ingredients until evenly distributed. Spoon half of batter into prepared muffin cups, or spoon more sugar over the top if your muffin tins are too small to fit.
Bake in preheated oven for 10 minutes, until lightly firm. Meanwhile, in a glass or metal bowl combine cooled banana mix, frozen raisins, honey and vanilla extract and pour over muffin batter.
Bake for an additional 15 minutes. To serve, remove from the oven and while still hot, beat egg whites until stiff. Beat in more sugar until just rounded, then pour into preheated oven for 2 minutes. Then, remove from heat and drizzle over warm cake while still hot.
