4 fluid ounces ketchup
2 fluid ounces pineapple juice
1 small lemon, juiced
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon Worcestershire sauce
1 dash chili pepper
1 boneless chicken breast, cut into 1/2 inch cubes
1 bunch fresh jalapeno pepper, seeded and chopped
In a large saucepan, mix ketchup, pineapple juice, lemon juice, garlic, Worcestershire sauce and soy sauce. Stir occasionally. Bring to a boil.
Add chicken and stir-fry on medium-high heat until lightly browned.
Pour over ketchup mixture and stir-fry for 5 minutes. Simmer for 5 minutes; stir frequently. Transfer to a small bowl, and immediately fold in mushrooms. Garnish with various citrus fruit (plum, apple or grapefruit) and/or bacon, if desired.
