1 1/2 pounds baby carrots, pitted and cut into 1/4 inch chunks
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried basil and oregano
1/3 teaspoon salt
2 teaspoons water
1 (10 ounce) can evaporated milk
1/3 teaspoon dried basil
1 teaspoon salt (optional)
1 1/2 cups diced cooked ham
Preheat oven on broiler setting.
Place carrots, olive oil, garlic, oregano, basil, salt, water and apple cider vinegar in a large bowl. Mix together. Mix in milk and basil. Pour into a small pot and simmer over low heat until thickened.
In a small bowl, mix cooked ham, ham, parsley and oregano.
Broil carrot mixture on broiler setting until carrots are tender and juices run clear. Pour over carrot and berry mixture in a 9x13 inch baking dish.
Bake uncovered in preheated oven for 30 minutes, or until tender. Cool completely.
