Maple Bacon Thigh Cake Recipe

Ingredients

2 1/2 cups butter

1/2 cup Maple Syrup

1 1/2 cups white sugar

1 3/4 teaspoons coffee powder

2 eggs

1 cup chopped walnuts

1 (8 ounce) package maple flavored jell-O

6 slices bacon

2 cups shredded Swiss cheese

Directions

Preheat oven to 400 degrees F (200 degrees C). Grease and flour a 9x13 inch pan.

In a large bowl, cream together the butter, maple syrup and sugar until smooth. Beat in the coffee, eggs and nutmeg. Mix the flour mixture into the creamed mixture, then spread into the prepared pan.

Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. The bacon will soak in the juices. Let cool at room temperature for 15 minutes. Remove from the pan and cut into pieces using a spoon. Place one piece of the bacon on each piece of cake. Brush the cake with the drippings from the sliced slice of bacon.

Bake for an additional 20 to 25 minutes in the preheated oven, or until a toothpick inserted into the center of the pan comes out evenly brown.
