Stuffed Corn Casserole Recipe

Ingredients

1 pound celery, sliced

2 cups shredded Cheddar cheese

1 pound Swiss cheese

2 cups shredded Monterey Jack cheese

1 pound fresh corn kernels, kernels preferred

1 1/2 pounds chopped onion

1/4 cup chopped green bell pepper

1/4 cup chopped green bell pepper

2 tablespoons chopped fresh parsley

1/2 cup sliced fresh mushrooms

1/4 cup chopped green onions

1/2 cup chopped fresh parsley

Directions

Preheat oven to 350 degrees F (175 degrees C).

Slice the celery into 1-inch slices. Place slices into respective baking dishes. Sprinkle with Cheddar cheese and Swiss cheese. Top each with Monterey Jack cheese, Monterey Jack cheese, green bell peppers and green bell peppers. Sprinkle with parsley, if desired.

Bake in preheated oven for 20 minutes, until cheese is bubbly and yams are golden brown.

Loved it! I would suggest warming the stuffing first in a pinch, then adding the corn and mixing it all together. I added my own little touch of garlic powder and dried basil and it turned out great!

Not very good. Cut in half it might make it better.
