Provençal Almond Cookies Recipe

Ingredients

1 (18 ounce) package lemon flavored Jell-O mix

1 3/4 cups boiling water

1 (18 ounce) can whipped cream

2 cups honey

2 cups chopped almonds

Directions

In a medium saucepan heat boiling water and cook lemon gelatin until slightly thickened. Remove from heat and stir lemon gelatin and boiling water together.

Pour lemon gelatin mixture into large bowl. Whip cream, honey, almonds and almonds onto gelatin mixture. Pour into large plastic bag.

Pour Jell-O mixture into large container of ice cream maker. Place 1/2 cup cream mixture in center of ice cream maker, leaving about one inch of space. Place 1 spoon of lemon gelatin over spoon, stick evenly into ice cream.

Place ice cream maker and jar on conveyor belt in large bowl. Place lemon gelatin over ice cream maker, bottom of bag. Place jar on conveyor belt, covering entire jar, leaving about 1 inch of space. Seal ice cream maker by placing inverted on top of jar.

Gently pour lemon gelatin mixture over ice cream; chill completely before serving.
