4 pounds onions - peeled, seeded and sliced
2 tablespoons butter
2 tablespoons mayonnaise
1/2 teaspoon cardamom
1/2 teaspoon salt
1 dash ground black pepper
1 pinch paprika
1 tablespoon dried thyme
Place onions in medium saucepan with water to cover. Bring water to a boil, stirring frequently. Reduce heat to low; cover. Cook 15 minutes, or until tender.
In a blender, combine butter, mayonnaise, cardamom, salt, pepper, paprika, thyme, onions and onions, stirring to blend. Pour sauce over the onions in a skillet. Bring to a boil, and simmer 10 minutes more, stirring occasionally.
I love this recipe and have thrown it into many different ways of cooking. I like to thicken it up a little at the start with a mix of nuts and dried fruit. Then when I feel like it is running out of steam and I save the rest for last. It is rich and creamy as well as sweet. It literally tastes like chili!
