3 thinly sliced sweet shrimp
1 cup sliced celery
2 tablespoons fresh lemon juice
1 cup red wine vinegar
1 teaspoon thin cucumber or lemon zest
salt and pepper to taste
2 cups shredded Cheddar cheese
Line a 9-in. square pan with aluminum foil; cover. Place shrimp in foil. Place celery cubes on the edges of foil. Cover with remaining celery cubes; pin stuffed shrimp, sealing tightly, and marking with forks. Place marinated shrimp around the edges of gelatin.
In a small saucepan over medium heat, cook cheese slowly over medium-low heat until melted. Pour cheese mixture over shrimp, celery, and celery.
Stir in lemon slice, salt and pepper. Reduce heat into low; cook 15 minutes.
