2 1/4 cups all-purpose flour
1 teaspoon baking powder
2 teaspoons white sugar
3/4 cup white sugar
1 egg
1 teaspoon vanilla extract
1/4 teaspoon baking soda
1 teaspoon salt
1/8 teaspoon salt
1 1/2 cups milk
1 green and red bell pepper, diced
1 tablespoon butter
2 eggs
1 tablespoon margarine
1 (14 ounce) can cottage cheese
In a medium bowl, blend all-purpose flour, baking powder, and sugar. Stir in the egg, vanilla, and baking soda. Mix until well blended.
In a medium bowl, mix 1/4 cup sugar with 1/4 cup margarine. Push egg mixture into flour mixture. Cover, and refrigerate dough overnight.
On a large baking sheet, sprinkle green and red pepper with butter and lightly coat with margarine. Arrange bell pepper circles on the prepared baking sheet. Spoon the cream of vegetable soup over the bell pepper circles.
Preheat oven to 350 degrees F (175 degrees C).
Place patties in preheated oven for about 30 minutes, or until golden brown. Serve with sauce over bottom of casserole.
