3 tablespoons all-purpose flour
1 cup chicken broth
1/2 cup light olive oil
1 1/2 cups minced onion
1 cup chicken broth
1 cup chopped onion
1 cup celery
1 cup all-purpose flour
In a medium saucepan, combine chicken broth, olive oil, onion and celery. Bring to a boil, then reduce heat; boil, stirring, until thickened. Stir in the flour and cook for a few minutes. Increase heat to medium and stir in chicken. Cover and simmer for about 15 minutes. Strain liquid through cheesecloth into a medium bowl.
