1 (10 ounce) whole chicken, cut into cubes
4 tablespoons lime juice
6 tablespoons milk
1 teaspoon grated lemon zest
1/4 cup lemon juice
Place chicken cubes in a large stockpot. Heat water to boiling in a large skillet. Place chicken cubes in boiling water until no longer pink; remove from heat and drain.
Stir in lime juice and lemon zest. Bring to a boil, remove from heat and stir in lemon juice. Reduce heat and simmer gently for 5 minutes.
