4 boneless, skinless chicken breast halves, cut into cubes
4 skinless, boneless chicken wings
2 tablespoons butter
2 tablespoons olive oil
2 tablespoons black pepper
1 clove garlic, chopped
5 stalks celery, sliced
2 teaspoons lemon juice
salt and pepper to taste
Preheat the oven to 350 degrees F (175 degrees C).
Remove chicken from broiler, and cut into cubes. Season with butter, olive oil, and pepper.
Unwrap each chicken piece, and cut into cubes. Heat 1 tablespoon of butter or margarine in a small saucepan over low heat. Saute celery and lemon juice in a large skillet until such a stir is easily made, about 3 minutes. Mix into the garlic cubes. Transfer chicken into a 2 quart baking dish, and bake in the oven 6 to 8 minutes, or until chicken is cooked through. Drain, and turn or roll, skin side down.
Place shredded celery leaves in a large bowl. Add chicken, celery juice, salt and pepper; mix together. Place coated chicken pieces on the baking dish. Cover, and bake 5 minutes, or until chicken is hard around the edges. Serve warm.
