1/4 cup butter
1/4 cup white sugar
1 cup packed light brown sugar
1 teaspoon vanilla extract
1 cup flaked coconut
Preheat oven to 350 degrees F (175 degrees C). Melt butter in a saucepan over low heat. Remove from heat and let cool slightly.
Stir together white sugar, brown sugar and vanilla extract, stirring (do not allow to cool completely). Sift together the coconut and butter, and pour mixture into an 8 x 4 inch glass dish.
Bake in preheated oven for 20 minutes. Uncover and bake for another 20 minutes. Remove from oven and allow to cool completely. Chill the pudding before serving.
