2 large strawberries
1/2 cup orange juice
1 teaspoon lemon juice
2 tablespoons honey
1 tablespoon white sugar
1/4 cup chopped pecans
salt to taste
1 cup mayonnaise
1/3 cup margarine
1/2 cup chopped green onions
Bring a large pot of water to boil. Add strawberries and boil for 10 minutes. Remove from boiling. Remove pits. Drain. Stir in orange juice, lemon juice, honey, sugar and pecans. Mix well.
Dissolve the mayonnaise in margarine and blend into the strawberry mixture. Dissolve the green onion and stir into the mixture. Garnish each salad with a strawberries slice. Chill in refrigerator 8 hours before serving.
I made this quick, easy appetizer for a party and they disappeared very quickly. Several people asked me for the recipe. I would definitely make it again.
