1/2 cup margarine, melted
1/2 cup unsalted butter
2 cups white sugar
1 (8 ounce) package cream cheese, softened
1 egg
1 teaspoon vanilla extract
1 cup cornflakes cereal
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the margarine, butter and sugar until smooth. Beat in the cream cheese, egg and vanilla. Mix in the cornflakes cereal until well blended, then roll into 1 1 inch balls. Roll the balls in cornflakes cereal until they are completely covered with the margarine mixture. Place cookies 1 inch apart onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until browned and puffed. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
