Cashew Shrimp Dip Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

2 tablespoons white sugar

2 tablespoons lemon juice

1/2 teaspoon lemon zest

1/4 teaspoon salt

1/8 teaspoon vanilla extract

4 cups shrimp, peeled, deveined and chopped

1 1/2 cups cashews

1 cup chopped sweet pickles

1 green bell pepper, seeded and sliced

Directions

In a medium bowl, mix cream cheese, sugar, lemon juice, lemon zest, salt, and vanilla. Mix thoroughly. Cover, refrigerate 30 minutes.

Preheat oven to 350 degrees F (175 degrees C). Place shrimp in a large, shallow dish. Place scallops in large baking dish, brushing with salt and pepper. Arrange cream cheese mixture over shrimp. Pour shrimp mixture over shrimp.

Bake in preheated oven for 25 minutes, or until shrimp are opaque and mixture is bubbly. Serve hot.
