3 cups white sugar
1/2 teaspoon baking soda
1 cup boiling water
2 cups milk
1/2 cup unsalted butter
1 cup packed light brown sugar
1 teaspoon vanilla extract
2 eggs
1 cup all-purpose flour
1 teaspoon baking powder
8 slices Italian bread
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, combine white sugar, baking soda and boiling water. Beat until smooth and pour into the greased cookie sheets. Use a pastry blender to cut the butter into the boiling mixture, then pour into the greased cookie sheets.
While the dough is warm, beat eggs and brown sugar into the creamed mixture, beat in the vanilla extract and flour. Stir in the remaining 1/2 cup peanut butter. Mix the flour mixture with the butter mixture alternately with the sifted brown sugar, until just blended. Roll the dough into 1 inch balls and place on the prepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, until golden brown. Remove from cookie sheets to cool completely. Cool completely before cutting into squares.
