1/2 pound potatoes, peeled and cubed
1 small onion, thinly sliced
1 cup water
1 cup vegetable oil
1 teaspoon salt
Preheat oven to 350 degrees F (175 degrees C).
In a large saucepan, mix potatoes, onions, water and oil until smooth, about 15 minutes.
Place an inch around the edge of a large baking dish. Measure potatoes and ladle them into the dish with water.
Place a large sheet of aluminum foil on top of potatoes and cut the potatoes into ½ inch cubes. Place one potato within the foil to keep them from sticking together for the pans.
With a large spoon, scoop the liquid from the potatoes onto the foil and sprinkle with salt as needed.
Bake in preheated oven 90 minutes, until easy to handle.
