Bell Potato Recipe

Ingredients

1/2 pound potatoes, peeled and cubed

1 small onion, thinly sliced

1 cup water

1 cup vegetable oil

1 teaspoon salt

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large saucepan, mix potatoes, onions, water and oil until smooth, about 15 minutes.

Place an inch around the edge of a large baking dish. Measure potatoes and ladle them into the dish with water.

Place a large sheet of aluminum foil on top of potatoes and cut the potatoes into ½ inch cubes. Place one potato within the foil to keep them from sticking together for the pans.

With a large spoon, scoop the liquid from the potatoes onto the foil and sprinkle with salt as needed.

Bake in preheated oven 90 minutes, until easy to handle.

This recipe was fantastic - totally faithful. I did use a can of diced tomatoes with the sauce and peppers, but Iori just used tomato paste. Will try with the baby spinach next time though!
