4 ounces cream cheese, softened
1/2 cup chopped onion
4 ounces shredded Cheddar cheese
1 (16 ounce) can refried beans
1 (3 ounce) can sliced mushrooms, drained
1 (8 ounce) package sour cream mix
In a medium bowl, cream together cream cheese and onion. Stir in the cheese mixture. Shape mixture into a thin dough. Roll into a smooth 1/4 inch balls, and place on a cookie sheet.
Heat refried beans and mushrooms in microwave oven over low heat, stirring occasionally.
When all goods are ready, place them in a medium bowl. Stir in the cream cheese mixture, then place the sour cream mix in the bottom of a medium bowl. Mix well. Roll up the dough, using two hands, and roll toward one end. Then fold in the cheese mixture. Shape into a roll. Roll the roll like a jellyroll. Use two or three hands to handle the dough. Place about 1/4 inch thick on the prepared cookie sheet.
Bake uncovered in preheated oven for 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool and serve.
