3 eggs
2 1/2 cups milk
1/2 teaspoon salt
1 1/2 teaspoons lemon juice
1/2 teaspoon dried parsley
1/4 teaspoon dried basil
1 cup sour cream
1 (15 ounce) can cherry pie filling
1 pound sweet potatoes, peeled and cubed
1 pound white potatoes, peeled and cubed
1 cup shredded mozzarella cheese
Bring a large pot of salted water to a boil. Add eggs and stir in milk. Reduce heat; cover and simmer for 20 minutes.
Stir lemon juice, parsley, basil, sour cream, and cheese into boiling mixture. Simmer 15 minutes, or until vegetables are tender. Remove from heat and stir in orange marmalade and Italian seasoning. Serve hot or cold.
