Fruit Salad Recipe

Ingredients

2 onions, halved

1 small green bell pepper, halved

1 medium zucchini, halved

1/2 cup chopped walnuts

2 tablespoons prepared Dijon mustard

2 tablespoons vegetable oil

1/4 teaspoon salt

1/4 teaspoon ground black pepper

2 lemons, cut into 1/2 inch segments

2 tablespoons orange zest

1/4 cup grape juice

1 cup fresh lemon slices

1 cup shredded Cheddar cheese

Directions

Place yellow onion slices on a plate. Mix together 2 tablespoons yellow onion slices, green pepper, zucchini, nuts and mustard.

Place green rice, cubed, on a serving plate. Mix together 8 tablespoons of vegetable oil, salt and pepper. Spread mixture over rice, then spread remaining tablespoon of oil over vegetables.

Place lemon slices on top of zucchini and zucchini. Drizzle with sugar, and sprinkle with orange zest. Drizzle green juice over zucchini and vegetable mixture.

Pour vegetable oil over rice and top with onions, green bell pepper, walnuts, lemon slices and grape leaves. Drizzle with remaining orange juice.

Turn steamer onto off. Pour vegetable oil over steamer, turning steamer every 15 minutes. Cook uncovered over medium high heat, stirring occasionally.
