1 (18 ounce) can sweetened coconut milk
1 cup whole wheat flour
1 cup corn flour
3 tablespoons baking powder
3 tablespoons baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 egg
1/2 cup butter, melted
1/4 cup peanut butter, softened
1 1/4 teaspoons pureed almonds
1 cup mashed bananas
1 teaspoon vanilla extract
1 cup chopped walnuts
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper liners.
Stir all ingredients in small bowl into flour and oats and stir just until moistened.
Place each muffin half's side up on paper or greased foil-lined muffin liners.
Bake in preheated oven for 20 minutes or until tops are golden brown. Flip muffins and cool. Serve warm or cold.
