3 apples
1 tablespoon butter
2 teaspoons white sugar
1 teaspoon salt
1 teaspoon vanilla extract
1 cup brown sugar
1 (16 ounce) can sweated/cinnamon icing sugar or evaporated milk
1 cup packed light brown sugar
Lightly grease an 8x8 inch dish.
Sift together 3/4 cup of the apples, butter, brown sugar and salt; set aside.
Heat the brown sugar in a large saucepan until sugar reaches 240 degrees F (121 degrees C). Make a well in the center and pour in 2/3 cup of the apples mixture. Bring mixture to a boil, stirring constantly. Continue stirring and gradually pour in the brown sugar. Boil for 3 minutes, stirring occasionally, until slightly thickened. Remove from heat. Sprinkle a layer of apples frosting over the top and spread evenly all the way through.
Combine the remaining apples mixture with the brown sugar. Sift the remaining 1/2 cup of apples mixture over the apples. Secure with a toothpick and gently flatten into the crust. Garnish with cinnamon sugar before cutting into squares.
