1 (10 ounce) package taco-style breakfast cereal mix
1 (10 ounce) package dried corn tortillas
2 pounds beef cold sausage
2 cups shredded Cheddar cheese
1:2 cups shredded lettuce
2 large onions, halved
5 green onions, thinly sliced
1 red bell pepper, quartered
1/8 cup shredded Cheddar cheese
Preheat oven to 450 degrees F (220 degrees C). Spread the corn tortillas on baking sheets and grease, if desired.
Bake in the preheated oven 10 to 12 minutes, or until fluffy (not too brown). Remove from the oven and set aside to cool. Layer the beef sausage and cheese over the warmed corn tortillas. They almost pooch themselves. Finally, lay the lettuce over the sausage in the middle of the tortillas and smooth cheese around everything. Slice red pepper with spoon and serve with sliced green onions. Top with shredded cheese and lemon pepper.
