1 1/2 cups all-purpose flour
1 tablespoon baking powder
2 eggs
1 cup milk
1 tablespoon butter, softened
1/3 cup sliced and diced chicken meat
2 large potato chips
1/2 basket straight chow mein noodles, or rather corn noodles
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch round or oval glass dish. Place about 1/2 cup flour on each side. Add egg, milk, and butter. Using a spatula, mix until dough is light and elastic. Roll out dough to a twelve inch square. Place in prepared pan.
Bake in preheated oven for 45 minutes. Remove pans from oven. Cool 10 minutes. Slowly turn oven to warm up. Reduce temperature over a medium heat to 350 degrees F (175 degrees C).
While the skillet or griddle is heating, heat chicken, browning well on both sides. Remove chicken from pan and place side down in pan. Allow to cool enough to handle.
While chicken is cooking, place the potato chips in the bottom of a large bowl. Stir gently into the skillet or griddle and place in the center of the pan. Sprinkle chow mein noodles and let the chicken brown for about 20 minutes.
Remove the chicken from pan, place in serving dish, top with chicken mixture, drizzle with melted butter.
Serve warm. Garnish with potato chips.
