1 (18.25 ounce) package lemon flavored Jell-O mix
1 (3 ounce) package lemon flavored Jell-O mix
1 (3 ounce) can lemon flavored Jell-O mix
1 cup boiling water
1 (8 ounce) package instant vanilla pudding mix
1/4 cup milk
1 teaspoon lemon extract
1 (6 ounce) can lemon-lime flavored carbonated beverage
In a medium bowl, mix gelatin and boiling water. Stir gelatin mixture into boiling water, stirring constantly, until gelatin dissolves. Remove from heat and stir in pudding mix, lemon extract and lemon-lime soda. Chill for at least 5 minutes, stirring occasionally to avoid sticking.
Pour mixture into the greased 9-inch round cake pan. Pour cake batter over jelly mixture. Pour batter over cake and jelly mixture. Cool completely. Set aside for at least 2 hours.
Preheat oven to 350 degrees F (175 degrees C).
Sprinkle each layer of cake with lemon gelatin in a single layer. Bake at 350 degrees F (175 degrees C) for 1 hour or until a toothpick inserted into the cake comes out clean. Cool cake completely before removing from pan.
