2 eggs, beaten
1/3 cup butter, softened
2 cups cranberries
1/4 cup white sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
3 ounces cream cheese
1/2 teaspoon ground nutmeg
4 cups cranberry sauce
Preheat oven to 375 degrees F (190 degrees C).
Melt butter in a large bowl. Stir together the cranberries, sugar and vanilla. Mix well. Beat cream cheese, cream cheese and nutmeg into the mixture until well blended. Spread mixture onto a large mixing bowl.
Bake in preheated oven for 25 to 30 minutes, or until filling is set and center of the pie is golden brown. Cool completely, transfer to a 9 inch pie pan and chill overnight. Serve chilled.
I followed the recipe exactly making no changes and these were amazing! Much like my Grandpa used to make it every Thanksgiving after a Fall hunting trip! Served them with gravy. Everyone loved them and I will make this time and time again.
