Roasted Pepper Jacks Recipe

Ingredients

1 pound pepper jack cheese

2 cups shredded Swiss cheese

1 1/2 cups shredded mozzarella cheese

4 ounces canned green chile peppers, chopped

1 small tomato, diced

Directions

Preheat oven to 350 degrees F (175 degrees C).

Melt the pepper jack cheese, and spread over a shallow 9x13 inch baking dish. Sprinkle the large cheese slices over the pepper jack cheese. Sprinkle the Swiss cheese over the top of the pepper jack cheese.

Bake at 350 degrees F (175 degrees C) for 25 minutes, or until the cheese has melted. Remove the cheese slices, and sprinkle with the mozzarella cheese. Return the pepper jack cheese to the baking dish. Sprinkle the mozzarella cheese over the pepper jack cheese. Sprinkle the peppers over the pepper jack cheese. Spread the shredded cheese over the top of the pepper jack cheese, and sprinkle with tomato.

Bake at 350 degrees F (175 degrees C) for 45 minutes, or until heated through. Serve with your favorite roast, if desired.
