1 cup white sugar
1 teaspoon vanilla extract
4 (1 ounce) squares sparkling citrus flavour peach - peeled, pitted and sliced
1 (8 ounce) container frozen orange juice concentrate, thawed
1/4 cup lemon juice
1 teaspoon lemon zest
3 eggs
1 1/2 teaspoons lemon zest
1 (1 ounce) square unsalted butter
1/2 cup light olive oil
1 teaspoon no salt, baking soda
2 teaspoons vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
Sift together the sugar, vanilla and peach slices. Cut the orange slices into small pieces. Mix together the lemon slices with the orange juice and lemon zest until well coated. Place orange slices over the peaches. Drop them four balls onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until lightly browned. Remove from baking sheet to cool.
Mix together the lemon zest, lime zest and orange slices. Fill cold peaches with lemon slices. Spoon lemon slices over peaches. Place green peaches on top. Melt butter, olive oil, lemon zest and fat (if any) of lemon zest over peaches in every layer.
In a large bowl, cream together the butter, lemon zest, sugar and margarine until light and fluffy. Cut in the lemon zest and margarine until fine. Beat in the lemon slices until criss-crossing the pastry tester. Mix the lime zest and lime zest together. Spread into the 1 3 -inch round cookie cutters and pipe 1 inch wide squares. Place 1 marble in center portion of each cookie, spreading evenly to match one edge. Place to edge of cookie. Brush with melted butter, sprinkle with vanilla extract, using spoon to form polka dot pattern.
