4 eggs
1/4 cup vegetable oil
1 (10 ounce) package frozen mixed vegetables
3 tablespoons fresh lemon juice
1/4 teaspoon garlic salt
1/4 teaspoon paprika
3 tablespoons vegetable oil
3 tablespoons grated Parmesan cheese
Heat oil in a large skillet over medium high heat. Stir together mixed vegetables and lemon juice; add garlic salt, paprika, oil and cheese. Cook, stirring constantly, until vegetables are golden brown; reduce heat to low.
In a small bowl, mix egg, vegetables, lemon juice, garlic salt, paprika and oil. Place mixture in a 9x13 inch baking pan. Heat oil in microwave for about 20 seconds on each side, or until eggs are cooked.
Cool, and slice into 1/2 inch slices. Serve at room temperature, with slices on the bottom.
